The Moritaka family has been making knives for hundreds of years and kitchen knives are now their primary pursuit. Over 700 years of tradition and craftsmanship have been brought to bear in the Moritaka Supreme series of knives which are constructed with a core of Aogami Super (AS) steel, laminated with layers of a softer iron. The very hard Aogami Super steel core can take an incredibly acute and refined edge. This steel is also slightly less reactive than other carbon steels due to the high alloy content.
A kurouchi finish is applied to the iron cladding which provides a wonderful rustic, traditional aesthetic as well as further helping the blade resist corrosion. However, due care should always be taken with carbon steel blades to assure they are wiped during use and kept dry.
Fit and finish on these Supreme knives is excellent and the 50/50 grind and superb edges make them ideal for left- or right-handed users. The knifemaker employs a compound/convex grind which aids in food separation and complements the incredibly potent AS steel edge.
