The Moritaka AS Gyuto 250mm is a revamp of the classic French chef knife design. The blade has that classic profile so loved by many chefs and knife aficionados. Long and less tall than a standard gyuto, this knife is a real all-around performer: cutter, chopper, and slicer all rolled into one. The thin, acute tip flies through vegetables and the flat edge profile is extremely good for various chopping techniques.
The Moritaka 250mm gyuto is made using expertly treated Aogami Super steel taken to an HRC of 64-65. The edges on this knife can be sharpened to very acute angles and high levels of polish while exhibiting superior retention and durability. The core AS steel is clad in softer iron which is given a lovely kurouchi finish which enhances corrosion resistance. That said, due care should always be taken with carbon steel blades to assure they are wiped during use and kept dry. Fit and finish is excellent and the 50/50 grind and edges on these knives make them ideal for left- or right-handed users.
