Moritaka Hamono began producing hand forged blades over 700 years ago. These years of tradition and craftsmanship have been brought to bear in the Moritaka Supreme series of knives which are made from a core of Aogami Super (AS) steel sandwiched between layers of softer iron cladding. The AS core is clad in a softer iron, which is dressed in a beautiful kurouchi finish. This, along with the Moritaka welded tang, goes a long way toward enhancing corrosion resistance. (Moritaka welds a stainless tang to a hand forged blade to prevent corrosion inside the handle.)
This 270mm Gyuto AS is a symmetrically ground blade. This style of blade is perfect general use and is a large knife for those of you who are professionals and do a lot of prep work. The steel is hard and the edges are steep so it cuts fantistally well but a little care needs to be taken to stay away from hard items such as bones and frozen foods.
This blade is mated to a beautiful bog oak custom handle with maple spacer and blackwood ferrule for great looks. It's made by our woodworker, Isaiah Schroeder.
