Moritaka AS Gyuto 240mm Custom. The core steel of this fine gyuto is fashioned from the ever-popular Aogami Super high carbon alloy made by Hitachi Metals. Aogami Super is a wonderful alloy for knives as it can be taken to very high levels of hardness. Moritaka heat treats the steel to 64-65 HRC which is an excellent level for this use. Edge retention is really outstanding as is the edge refinement these knives are capable of.
The inner core of the knife is clad in a softer iron that Moritaka bestows with a very fine kurouchi finish. This bolsters the anti-corrosive properties of the knife. The grinds on this series are excellent and the edges are an absolute dream to work with. They sharpen with ease up to high grits and are capable of taking steep edge angles. They are also durable and exhibit great retention.
This gyuto is a perfect length for pro cooks and knife enthusiasts. The dimensions also make it well suited to processing lots of food in a short amount of time. It should be a knife suited to most cutting styles but push cutters should really enjoy it. It comes with a gorgeous custom handle in an octagonal shape.
