Moritaka has been handcrafting blades since the turn of the 13th century and the tradition implicit in the company’s long history is tangible in this exceptional line of kitchen cutlery. The history and tradition accrued from over 700 years of hand forging swords and knive.
The core (hagane) of these knives is the ever popular Aogami Super high carbon alloy made by Hitachi Metals. Aogami Super is superb steel that can be taken to very high levels of hardness. Moritaka has heat treated the steel to 64-65 HRC which is an excellent level for this steel. Edge retention is top-notch as is the refinement these knives are capable of.
The inner core of AS steel is clad in a softer iron that Moritaka presents with a gorgeous kurouchi finish. This bolsters the anti-corrosive properties of the knife. The grinds on this series are excellent and the edges are an absolute dream to work with. Easy to sharpen through high grits and capable of steep edge angles, the edge is nonetheless durable and exhibits great retention.
