The Moritaka AS Custom Deba 165mm is an unusual variation on the deba theme in that it has been ground on both sides of the blade. Due to the more symmetrical grind and edge bevel it is sometimes referred to as a Western deba. This is a nice choice for many cooks as the edge is more durable than its single-bevel counterparts and sharpening the blade is far easier than the normal style of knife. It can also be used in more applications than simply breaking down whole fish. This is a tremendous knife for left-handed users who are looking to explore the deba pattern but do not want to pay large sums of money to have a left-handed run produced by the smith in Japan.
Aogami Super steel, treated to HRC 64-65, comprises the core of this knife which is clad in a softer iron for shock resistance and extra durability. Moritaka chooses to present his knives with a gorgeous kurouchi finish which bolsters the anti-corrosive properties of the blade. The grinds on this series are excellent and the edges are an absolute dream to work with.
The blade is matched to a very attractive stabilized custom octagonal handle produced by one of our talented woodworkers.
