At CKTG, we are fans of knives made from Aogami Super Steel. This interesting high carbon alloy is similar to Blue paper #1 but has more tungsten, chromium, and carbon. These additives endow the steel with an ability to take a very acute edge angle and hold that edge better than many other popular carbon steels. It also scores highly in the easy-to-sharpen category. In fact, many makers and users regard it as the pinnacle of carbon steels.

This 270mm gyuto gets very thin at the tip and behind the edge. For all its longer length, it still feels really well balanced and confidence inspiring—while the flatter edge profile makes this knife ideal for push and pull cutting. It has a 50/50 convex grind which does a great job separating ingredients and the Aogami Super steel is a real treat to use and sharpen. It takes an incredibly refined edge and is slower to patina than other carbon steels due to the higher alloy content in the steel.

    I bought this custom Moritaka about 6 months ago. I love AS steel and was admittedly drawn by the custom handle. I already had an AS 270 Gyuto from another top blacksmith but couldnt resist the aesthetics of this knife. Even knowing the dimensions, I was taken by the size of the knife when it arrived. Its a monster and my immediate fear was, it was too large. Setting it next to my other 270 Gyuto, only underscored its size. The 270mm blade was fine but having and additional 160mm behind the blade made the knife appear out of proportion. The fit/finish was excellent and it was stunning piece of work, albeit cartoonishly large compared to its peer.But looks don't determine a knife's usability and in this case, the functionality is superb. The balance and geometry, all converge into a perfect knife for its intended use. The additional size of the handle never gets in the way when using a pinch grip. The knife is so good that I have found myself using it when I would otherwise grab a 160-180mm Gyuto. Without a better knife to compare it against, I have to say that this Moritaka is my reference standard against what a knife should be.Moritaka will be my first brand choice on my next purchase.
