Moritaka AS Custom Gyuto 270mm. This one has a very nice handle done by Isaiah Schroeder. Aogami Super is tremendous steel that can be taken to very high levels of hardness. Moritaka has taken the steel to 64-65 HRC which is an excellent treatment for this steel. Retention is top-notch and the edges are not too crisp by any means. The refinement these knives are capable of is very, very high. The Kurouchi finish on these blades adds a rustic aesthetic which enhances the traditional character of this gyuto. Performance is excellent and the symmetric convex grind, which gets nice and thin behind the edge, does a great job separating even very hard/dense produce. The flatter edge profile makes this knife ideal for push and pull cutting. While not inexpensive, we believe the level of performance, quality of steel and tradition offered up by Moritaka knives make them a tremendous value.

    5  My new reference standard for a Gyuto, October 17, 2017

    I bought this custom Moritaka about 6 months ago. I love AS steel and was admittedly drawn by the custom handle. I already had an AS 270 Gyuto from another top blacksmith but couldnt resist the aesthetics of this knife.

    Even knowing the dimensions, I was taken by the size of the knife when it arrived. Its a monster and my immediate fear was, it was too large. Setting it next to my other 270 Gyuto, only underscored its size. The 270mm blade was fine but having and additional 160mm behind the blade made the knife appear out of proportion. The fit/finish was excellent and it was stunning piece of work, albeit cartoonishly large compared to its peer.

    But looks don't determine a knife's usability and in this case, the functionality is superb.

    The balance and geometry, all converge into a perfect knife for its intended use. The additional size of the handle never gets in the way when using a pinch grip. The knife is so good that I have found myself using it when I would otherwise grab a 160-180mm Gyuto.

    Without a better knife to compare it against, I have to say that this Moritaka is my reference standard against what a knife should be.

    Moritaka will be my first brand choice on my next purchase.
