The small range of knives that we stock from Misuzu is an eclectic collection of styles and metals. Adding to that mix is the new White #2 Yanagiba 270mm Left Handed. This fine knife is fashioned from White #2 steel, which is one of the most favored steels for making a yanagiba.
Shirogami (White) 2 has very good edge holding properties together with a particularly high working hardness. The alloy allows for an edge that can be taken to an extreme sharpness, while being able to hold that sharpness for a long time. This is an essential attribute required of a knife that is used for foods that need an extremely gentle preparation. The inner core steel is clad with a soft iron outer layer.
This is a gorgeous example of Misuzu's work. As with their other knives, this yanagiba is a beautifully realized and executed blade. The bevel is perfectly ground. The spine and choil are impressively relieved and polished. The hand chiseled kanji is artfully executed. And the custom handle is the perfect enhancement to the beautiful aesthetic.
We asked Misuzu to do these knives since we don't have a lot of choices for customers who want a left-handed yanagiba. If they prove to be popular we'll keep bringing them in.
