Unlike awase knives, which use a softer outer layer over the core steel, honyaki blades are made from one single piece of steel. Honyaki translates to “true forged” and it is this principal that sets these blades apart from all others. These knives customarily use a hard carbon steel and the honyaki process takes that hardness even higher. As such they are very difficult to make and sharpen. The result is a knife that costs more than clad types and is more challenging to maintain. But in return you get a knife that takes an incredibly thin edge and stays sharp longer than most. Cutting performance is at the top of the spectrum. The difficult manufacturing process also means that we only get a few of these rare blades each year.
Mizuno-san starts with a Blue Paper #2 steel and hardens it to 63 Rockwell along the cutting edge. The heat treat is exemplary. After forging and sharpening, there is a lovely hamon line formed at the junction of the different heat treatment areas. The blade then receives a mirror polish to add to the allure and further enhance the hamon.
The overall geometry is that of a tall blade with a nice flat area from the chin to about 2/3 along the edge. Here it transforms from a slightly rounded belly to the fine tip. Obviously the overall fit and finish are of the highest standards. It comes with a beautiful custom handle made with triple dyed maple burl.
