The Mizuno family is well regarded for the outstanding blades they product. The family is now in its fourth generation with a history of blacksmithing that goes back to the late 1800ís. This Mizuno Tanrenjo Hontanren 210mm gyuto is an exceptional example of the union of form, function, and craftsmanship that make Japanese handmade cutlery the envy of the world.

This gyuto is constructed of an Aogami #2 carbon steel core wrapped in a soft iron cladding. Since neither the cladding nor the core steel are stainless, a patina will naturally form during normal use. The core steel is hardened to 62-63HRC for allowing for acute bevel angles and keen edge taking. Mizuno knives are particularly well regarded for their outstanding heat treatment. Comes with a beautiful custom handle. Like any handcrafted item, each one of these knives is unique and dimensional variations will occur between them.

    Ok, so I have a Super petty and an SG-2 gyuto that are, by the numbers, both better - but I love this knife. First, the cladding takes a gorgeous patina and has just the right flex to feel *right* (mine is a 240 with a wood handle, YMMV with this blade and handle setup).And the steel...OMG. I think I like Blue2 better than Super - it takes a finer edge on my 1k-4k-8k-16k glass stone set and, after a full day of using it for admittedly light, but delicate, work like shaving hamachi and brunoising persimmons, literally two minutes with the 8/16 stones brings it back. Plus Mr. Akitado stamps the blade! The only downside I've found is that it slowly loses the hair-popping edge over a couple of days on account of the carbon steel oxidizing, but if you polish it up every shift...best knife ever!
