Makoto Kurasaki and younger brother, Yu, have been making blades under the tutelage of their famous mentor, Hiroshi Kato, for many years. Makoto-san has recently been making some fine blades for CKTG, sharing time with his brother in the new shop he started in Echizen. His goal is to establish himself as an independent blacksmith and it's our pleasure to help get his knives out to the public.

His steel of choice for this gyuto is Hitachi White #2 carbon steel. It is universally liked in the kitchen knife world for its ability to take an extremely fine edge. White, or Shirogami, #2 is very pure with a slightly lower carbon content than Shirogami #1 steel. It is capable of achieving a high hardness level without being overly brittle. Shirogami #1 is a great steel for professional or home cooks who like to keep their knives extra sharp. The outer layer is a soft iron steel which retains the carbon scale from the forging process. This kurouchi finish lends the blade a great rustic look and adds a great contrast to the exposed damascus layers between it and the blade edge.

This is a well-priced offering by Makoto Kurosaki that uses a nice handle, good steel, and excellent blade geometry for an unmatched value for such a finely made knife.

    Great knife if youre looking to get into the custom chef knife scene and not break the bank. I filleted a 150lb swordfish with this for my first use and it performed better that any fillet knife I own. Super sharp and precise all the way through.
