Sujihiki is a westernized
Yanagiba. It features the same long slender blade so essential to slicing proteins in a quick efficient one stroke manner. But unlike its more traditional cousin, the Suji is ground on both sides of the blade.
This makes it easier to handle and sharpen for more people while sacrificing only a slight performance advantage to the Yanagi.
