The long, slender lines of a 300mm
sujihiki are doubly elegant when it wears a beautiful deep blue/black kurouchi finish such as the one on this knife from the Masakage Mizu line. The kurouchi finish tops a reactive cladding layer over a Hitachi Aogami #2 carbon steel core hardened to 62-64 HRC. Aogami #2 is renowned for taking keen edges at acute bevel angles and holding those edges very well. That makes a knife such as this an outstanding choice for customizing edges for specific tasks. Since the cladding and core steels are reactive, care should be taken to keep the knife clean and dry between uses. The knife has a cherry wood handle with a marbled resin ferrule. As with all Masakage knives, fit and finish is first rate. The Mizu line of knives is hand crafted in Takefu Village by master blacksmith Katsushige Anryu.
