Katsuto Tanaka is the principal blacksmith responsible for hand-forging these lovely blades in his famed shop located in the town of Matsubara in the city of Omura, Nagasaki Prefecture. Tanaka-San lives and works with his entire family in his blacksmith shop outside Nagasaki and he is a very talented and hard-working smith.
This is the first knife we are carrying in the line of Ginsan knives originating from this shop, and one we are particularly excited about. Ginsan steel is well regarded for its excellent edge taking abilities. It is also a nice steel to sharpen, if somewhat harder than some carbons. The inner core of G-3 is then clad with a multi-layer damascus stainless steel, so you have a knife that is incredibly strong but also super durable and easy to sharpen.
This knife carries the classic French profile, also known as a KS profile. The blade is long and slender, and so elegant. We have combined his blade with a really well made custom handle made by Studio Khii (Konosuke) using ebony wood in an octagonal shape that is thin, elegant, and a joy to hold. It's a perfect combination and one of the nicer knives we've done this year at this price point.
