- verified customerthis knife is wonderful, as you know the usuba is a single bevel knife that unfortunately was mostly taken over by nikiri and santuku blades but when u tighten up this blade( needs it out of box) it is such a joy to use. If you are a fan of push chop like myself or machine chopping this is a must have. A great price for a Masamoto this knife performs at a very high level. Edge retention is great, I did 20 gallons of Brussels a day for a week without even the slightest effect on the edge. Remember this knife is single bevel so u must sharpen it differently than a double bevel so please do your research but single bevel knives really perform like nothing else. I cant recommend this knife enough if u use a veg knife for a professional setting. Also the balance here really is comfortable for a pinch or double pinch grip so if your like me enjoy!
