If you are familiar with Japanese kitchen knives you have undoubtably heard of or used a knife from Tsukiji Masamoto, Japan’s #1 knife maker.
This 170 year old company traces it’s roots back to a small shop just outside Tokyo and founder Minosuke Matsuzawa. The seventh generation owner of the company, Misao Hirano, has moved the operation to the famous Tsukiji fish market where they sell their iconic knife creations to many of the very best chefs in Japan and the rest of the world.
You would be hard pressed to go into any reputable Sushi Restaurant and not find one of these pervasive blades being wielded by at least one of the chefs.
The Masamoto 270 mm Gyuto is a big chef knife capable of processing big things! The largest cuts of meat, the largest load of vegetables fall prey to this knife in an easy and efficient manner. The asymmetrical blade is ground thin and holds that sharpness well. It is an easy to maintain knife being constructed from the proprietary Hyper Molybdenum Vanadium stainless steel used exclusively in the VG line.
This is a real workhorse of a knife and we think, one of the best available to lovers of hybrid design kitchen knives.

Amazing western gyuto, veggie prep was a dream, handled carrots, potatoes, onions like butter, and with OOTB sharpness. can't wait to sharpen it.
