Matsubara knives are made by Katsuto Tanaka, who is the principal blacksmith responsible for hand-forging these lovely blades. He works in the town of Matsubara, in the city of Omura, Nagasaki Prefecture. The region has a rich tradition of blacksmithing that goes back many centuries. Those techniques are still being used today in the production of knives and farm tools.
The line we are selling here is made from one of the most popular carbon steels in the knife world, Blue #2. The alloy is known for its outstanding edge life and overall toughness. However, blue steels are a bit harder to sharpen than whites, which do cut better as they dull down. But the edge on blue steel is one of the longest lasting of the paper steels. The core steel is clad with a soft stainless jigane. The cladding is the recipient of a unique hammered finish which is created using a special anvil on the spring hammer that Tanaka-san has designed. This outer layer adds strength and shock resistance to the inner core while decreasing the amount of maintenance required by an all-carbon blade.
