Matsubara Blue #2 Nashiji Kiri Cleaver 190mm. This excellent knife is constructed from Aogami 2 (Blue #2) high carbon steel. This is one of the most popular steels in the world of kitchen knives. The alloy is known for its outstanding edge life and overall toughness. Blue steels are a bit harder to sharpen than whites, which do cut better as they dull down. But the edge on blue steel is one of the longest lasting of the paper steels. This core steel is laminated in the san-mai style with a softer stainless steel which is given a lovely nashiji (pear skin) finish. This adds strength, reduces mass, and makes daily maintenance a breeze.

Looking like the offspring from an encounter between a cleaver and bunka unique knife is a wonderful tool for almost every cutting and chopping duty in the kitchen. It is thin like a bunka but it is tall like a cleaver and great for tall ingredients, big hands, or a simple desire for a taller blade are addressed with this versatile shape. The knife is finished off with a nice custom octagonal handle.

    Very good fit and finish. Excellent grind that I was able to make screaming sharp. Balance is a bit blade forward but feels balanced and nimble- goes through produce with no effort at all. The front curve makes this an outstanding all-around knife, good for push/pull cutting, chopping, and rocking. The tip allows for delicate work as well. Although I have it in a knife rotation, it would be an excellent solo knife also. And the looks are unique, which is great. I love this knife!

    I have a couple dozen J knives custom and otherwise. I'm using them primarily in a professional environment with some tucked away for home use only. I find myself using this blade on the job almost daily. First of all it's a handcrafted piece of art beautiful and unique. But like Ferraris also meant to perform at a high level and not be sitting around as a drawer queen. This is heavy enough to be a sturdy solid veg workhorse. Sorry no bones here. But light enough to carry 2 cases of onions or butternut. Not a laser but not a heavyweight. Beautifully handmade. A real joy and with a custom handle worth every penny. I also reccomend the taller and the narrower 240 s own them both and love them.

    Was a little hesitant to try this tall nakiri, but based on reviews went for it - glad I did - found it was as easy to use as a typical nakiri. Nice addition to my nakiri collection

    I bought this knife because I like taller profile knives but I didn't want to necessarily go with a Chinese cleaver. This tall nakiri seemed like it would fit the bill for me. I enjoy using this knife for my vegetable prep, although it does have some issues with wedging on root vegetables and the like. Overall, I like the concept of this knife but the fit and finish is rustic.
