The Shiro Kunimitsu family has been making swords for over 200 years. During this time they were awarded the honor of having a sword that was dedicated to a past Japanese emperor. Their blade making skill has been passed down through many generations of metal smiths. Now these fine craftsmen are bringing their talents to the world of Japanese cutlery.

Using the popular Shirogami white #1 steel, Kunimitsu make their kitchen knives with a san mai construction of stainless alloy over this soft carbon core. The stainless cladding covers almost the entire blade up to the edge. The small exposed inner layer needs to be carefully cleaned and dried after use to prevent corrosion and rusting. The inner core is hardened to 61-62 HRC.
The 240mm length of this gyuto is the most popular size chef knife you will find in professional and home kitchens. It is the perfect blade size for almost all cutting, slicing, and chopping tasks. It features a fairly flat profile with a slight belly and average grindógreat for all kinds of users. Simple and unassuming, this knife comes with a basic wooden Western style handle.

    This knife is great for slicing larger vegetables like heads of cabbage, sweet potatos, and large carrots. Also works great cutting citrus and meat into thin slices. This knife is sharp enough to go to work right out of the box and has made food preparation more enjoyable. I like the simple unassuming looking. I think it is well balanced because I do not even think about that while using it.
