Itís hard to write about Konosuke knives without entering into the world of hyperbole! Many of our CTKG customers revere and collect the many different examples of their wares. They are written about and discussed on our forum more than any other single manufacturer. Some of their signature blades sell out within a few minutes of being offered on line. Such is the mystique and desirability of these superbly made knives.

The white #2 line is a new addition to the Konosuke catalog. Resembling the ubiquitous HD2 line, these knives are made from Shirogami #2 carbon steel. Like the HD2 they are also mono steel constructions made by the same blacksmith, so it should be no surprise that they are very similar in proportions and dimension. Like the HD2, they are a true laser in performance, too.

Much is said about Konosuke fit and finish and it is very evident with this knife. The look is classical, understated, almost clinical. The choil area and spine are rounded and polished to perfection. The handle is made from stabilized, dyed buckeye burl.

    I lurked this site for nearly a year waiting for a konosuke gyuto. This was my first of two. I jumped on it with both feet, and paid $240 for this knife; they were later re-handled at a steeper rate, as probably befits this knife. I consider this to be a ridiculous bargain. The first time I used it was an Aha moment, and the experience had little to do with anticipation. It is soooooo much different than using a Western chef knife. I\'m spoiled. It was hair-shaving sharp OOTB, sharpens really easily, and using a 12 degree angle, the knife is thin enough to where you can use the weight of the blade from the heel, and pull it toward you, and nearly bisect a ripe half-pound tomato. The tip is supple, the belly is perfect, and the flat area at the heel - the entire geometry- make this the perfect gyuto if you\'re good with using a laser rather than the beefier gyutos which mirror the traditional Western chef knives. As an adjunct, I got the kono 210 KU, and between the two of them, I feel I can do just about anything. The blade is reactive; it will spot if you use a wet wipe, but if you follow up with a dry towel, no worries. It elicits ooohs and aaaahs when you whip it out. If you want to feel like Ron Jeremy, but lack the equipment, buy this knife!

    After handling half a dozen J knives, I now know what superior fit and finish is. The Konosuke I handled was in another class (i.e. no sharp edges - everything was smooth, smooth smooth).

    It remains light in the hand but the balance point is ever so slightly blade forward. As a result, it is all downhill with this knife - free and easy push-cutting and chopping all day long.

    As a very thin knife, it handles soft produce with ease. I was surprised to find it still worked well with thick carrots and cabbage as well (although less authoritative than a heftier knife). Pick it up and put it down. Repeat. This knife won't tire out and neither will you because it is so light in the hand.

    One note: if you are looking to rock, this may not be your knife. There is little to no belly, so in order to mince herbs, the motion feels a bit more exaggerated. But for chopping and push-cutting, it would be hard to find something better than this laser.

    This knife is easily high in the running for a one and done knife, depending on your style. The profile can manage all techniques. The grinds are great allowing for good food release especially for such a thin knife. Fit and finish is perfect. The handle is great and the knife has perfect balance with a slightly weight forward weight to it even though it's very light. Cuts like a dream and can handle anything. The reactivity is easily managed, so don't shy away from it if this worries you. Overall, an amazing knife, great price, pleasure to hold and use. Highly recommend!!

    This blade is wonderful. With a mix of its perfect balance, wonderful profile, and great grind it is able to instill a sense of authority and comfort in the user. Highly Recommend!

    Don't waste anymore time and don't think just get it you will not be disappointed. Susan and everyone involved have made cktg my go to when looking for gifts and personal knives .can't stress it enough this knife is a must have in your bag .great edge out of box but I put it through my stones and it is no joke a laser beam . My HD 2 gets some time off after getting this .thanks again from Canada
