Gyutos come in many shapes and sizes, not one or another being regarded as a standard. That is, unless you’re talking about the classic French profile. This western design has crossed the continents and is now a staple of many leading Japanese knife makers. The fascination with this slim and narrow profile remains strong and so we decided to ask some of our suppliers to make their rendition of this famous blade shape. Konosuke has given us their interpretation in the form of the Togatta GS+ 240mm. Togatta means pointed in Japanese and it aptly describes this singular blade design.
The knife features a semi stainless steel GS core that is heat treated to a HRC rating of 61-62. The grinds are made super smooth and the overall fit and finish is pure Konosuke. The core is clad with a softer stainless layer which protects and strengthens the blade. It also makes for much easier maintenance.
The Konosuke Togatta GS+ is a true laser, featuring a thin 2.2mm spine at the heel and a behind-the-edge grind that is in a league of its own. It has an edge profile that is more rocker than pusher but it will find favor with both styles of users.
