Konosuke Swedish Stainless Gyuto 240mm. This one comes with the very nice, Laurel octagonal handle. The Konosuke brand is synonymous with quality: quality of workmanship, performance, fit and finish. They are one of our most popular manufacturers in terms of desirability and pride of ownership.

The company uses various blacksmiths and techniques in the production of their many sub brands. These brands can be split into a few main classes. The group that garners the most interest and discussion is the laser class. Within this grouping you will find knives made from HD2 semi stainless steel, White #2, GS high carbon semi stainless, and the one featured here, Swedish Stainless. They are all made by the same blacksmith to an almost universal shape and technical specification.

The steel used in this knife is derived from some of the best iron in the world. Featuring a fine grain structure and low contaminant content, these blades are hardened to 60-61 HRC. They are stamped from a single piece of metal and given a grind that truly defines the laser terminology.

Edge retention and overall durability are hallmarks of these knives. But the ability to slice with consummate ease and control are the real buzz words that knife lovers attribute to the line. The way this knife simply falls through food is a feeling very few blades can achieve and one that almost defies description.

    Everything people have said about this knife, and what they have said about the HD2 seems to apply. I think the knife is great. But, I don't have an HD2, and I notice people wait a long time and pay a premium for an HD2 while this one is usually available. Is it as good as an HD2? Does anybody have back-to-back experiences with both. Mark has suggested they are equivalent, but the market seems to favor the HD2 much more. Is that tulip bulbs, or is there a reason?

    I bought this as my first jknife for use exclusively in a fast paced pro environment , and it did not disappoint . I wanted an HD2 and of course they were out of stock , so I went with the Swedish at Mark and Steves recommendation. The fit and finish were flawless, can't speak to OOTB edge because I had cktg(Alton) sharpen it , which I highly recommend . Crazy thin behind the edge , truly a laser. Very reslilient steel, and I found it very nice on the stones . Edge retention is pretty good , quick strop after a shift and it's ready to rock. To me this is a budget kono, and it definitely delivers .
