This is the same blade as the regular Konosuke MM Ginsan Gyuto 240mm but with the upgraded Khii Studio Ebony octagonal handle. We cannot understate how beautifully made these handles are. They are both aesthetically and functionally one of the best handles we sell. Fit and finish are of the very highest standards. They are striking in their simplicity.

The dimensions are rather unusual in that they are smaller than regular octagonal handles. The height is the same but the width is reduced making for a very easy to hold knife that has great control and stability. People with larger hands may find the dimensions to be on the small side. But many users have reported that they have found this slimmer style to be surprisingly pleasing. The handle is installed with a machi, the small gap between the neck and ferrule. This is a very traditional method of handle installation that dates back to the original Katana Swords. It is sometimes referred to as Tokyo Style.

We thought that the new MM Ginsan was a brilliant knife. This takes that brilliance and puts a brighter shine on it.

    This knife is a sleeper. With all the hype of the Fujiyamas, the MM is quietly doing everything right. Of all my knives, including a B1 Fuji, this is the best cutter of all. Itís nimble and quick like a laser, but hefty enough to do more. I wouldnít put it in the workhorse category, but itís good for 80% of what most might need. Get one of these, theyíre next in line for the craze.
