Konosuke’s new MM line of kitchen knives is the perfect embodiment of the skills of both the blacksmiths and sharpener/polishers that are a huge part of the Sakai knife manufacturing scene. This knife making region of Japan is known for sharing resources across many different makers. Other blade making towns are more one-stop style operations in that the entire knife blade is made and finished in one location under the eye of the head blacksmith.

The original MM series started with a line of knives constructed from Blue #2 steel. These new additions continue the basic style and proportions of those knives but use Ginsan Steel as the core element. Ginsan, or G3, is highly regarded for its keen edge taking and considerable toughness. It is a semi stainless steel that is then clad is a softer stainless alloy to protect and strengthen the inner core. Ease of maintenance is thus a minor issue with these knives. The blade face is given a very fine hairline finish which is further adorned with some beautifully executed hand engraved Kanji elements.

These are Konosuke knives, so you can be assured of the highest levels of fit and finish. Blade geometry and grinds are equally impressive. This is a thin knife in terms of profile and blade thickness. Not a laser but certainly not a workhorse either! Unlike their Blue #2 counterparts, these are supplied with classic ho wood handles featuring a buffalo horn ferrule. The handle and blade have a small machi (gap) that is nicknamed Tokyo Style.

    The only issue I have with the knife is the fact that it was advertised as a hairline finish and it is definitely not. Vertical sanding marks make this apparent. Overall I'm still completely satisfied with the knife to the transaction. Mark is a good guy and I will continue to do business with in the future.

    Haven't used this too much, but I can say right from the start that it is one of the best all-around 210 stainless knives I've ever picked up: versatile profile, good weight, good balance, sharp, thin edge, even grind, and ever-so-slightly more robust than most Konosuke "lasers" without feeling like a single gram is wasted. The tip is thin enough but is not super-thin—it isn't made for tricks, but for service. This will probably be the most-used and most-loved knife by all my guests as it feel carefree but still packs a stealthy punch. I posted a few images and such on P. 33 of this thread:
