Taking many attributes from the famed Fujiyama line, these beautiful knives are made with the love and attention to detail that has made Konosuke such a household name among knife enthusiasts worldwide.
The blades are constructed from Aogami 2, which is made by Hitachi Metals. Also known as Blue #2, this steel is a very popular alloy used in the making of fine cutlery. The inner core, or hagane, is laminated san-mai style, with a soft iron cladding decorated with a brushed hairline finish. While the cladding will aid in strengthening the core it is still a soft iron so care needs to be taken in the cleaning and storing of these knives. Some really fine kanji elements are hand engraved by Mr. Kawamura on the blade face to set off the refined look of this beautifully made knife.
This is the longest knife in the MM range and it is a perfect tool for pro chefs who like big knives for the increased productivity they afford. But dont let the size dissuade you if you are a home chef and like large knives. This actual edge length on this knife is 250mm and it has the nimble feel of a smaller knifeit is really well balanced and the wonderfully thin grind just adds to this tight and light feel.
