As with all Konosuke knives, it is not just about the look and superior fit and finish, the performance of these knives is their most important attribute. This certainly applies to the latest line of knives we have received from this, our most popular maker.

The new MM line of kitchen knives is another testament to the skills of both the blacksmiths and sharpener/polishers that are such an integral part of the Sakai knife manufacturing scene. The region is known for sharing these resources across the many different makers, unlike other regions where the maker does everything themselves. Konosuke has made it an art as far as establishing and maintaining these hard to find resources.

The MM line is currently comprised of 3 gyutos which span the popular sizes found in most kitchens. This 180mm version is the shortest of the three. As such it is a perfect tool for smaller kitchens, boards and or hands. It is also a very interesting variation of the popular Santoku which normally runs this length. Of course, it has a classic gyuto profile rather than the blunt looking santoku and the blade height is also shorter. These more moderate dimensions make for a very tight feel on the board and a dextrous ability when working with smaller produce or performing more intricate cuts and detail work.

The blade is fashioned from Blue #2 steel which is protected by a hammer forged layer of soft iron using the san-mai technique. The face is given a very fine hairline finish which is further adorned with some beautifully executed hand engraved Kanji elements. A traditional octagonal handle made from ebony is the final piece of this handsome and wonderfully functional work of the knife maker's art.
