The legend continues! Konosuke HD knives are some of the most popular knives we carry at CKTG. They have been a stalwart in many professional and home kitchens since they came out over six years ago. The HD line has grown a lot since then. Taking in most of the popular shapes and sizes, the HD roster can now complete any knife roll.
Light and nimble, this Sujihiki
makes short work of most slicing and carving tasks. This blade is not only thin at the spine, but it is insanely thin behind the edge. Couple the svelte grinds of the blade with the steel's ability to take and hold an acute sharpening angle, and you are in for a real treat!
The HD steel is a semi-stainless steel that Konosuke heat treats to a hardness of 61 Rockwell. This results in an easy to sharpen edge with an ability to maintain that edge even after the longest work session. The blade is a semi stainless steel that will react to food and eventually patina over time. This can be easily removed or left to add character to the blade.
This particular knife is supplied with a beautiful Khii Studio handle made from a single piece of laurel wood.
