We are constantly being asked about knives featuring the popular French Profile made famous originally by Sabatier. Over the years this shape has been embraced by chefs in Europe and the USA. But recently a certain Japanese maker adopted the shape and made an Eastern equivalent that took the knife world by storm. We decided to have some of our top blademakers come up with their variations on this theme.
Togatta means pointed in Japanese and it aptly describes the look of this much loved blade design. We asked the blacksmith responsible for our in-house Kohetsu line of knives to come up with his interpretation and thus we present the Kohetsu HAP40 Togatta Gyuto for your consideration.
HAP40 is recognized as one of the best steels on the market for the production of high quality, high durability kitchen knives. Unlike other powdered steels, it is fairly easy to sharpen on normal stones while holding a really sharp edge even after prolonged use. No other steel on the CKTG site gets even close to HAP40 in terms of edge retention. The steel is manufactured by Hitachi and it can be hardened up to between 64 and 68 Rockwell. We chose 65-66 HRC as the sweet spot for these knives.
