Konosuke Ginsan 210mm Wa Gyuto Yew. These knives are made from Ginsan stainless steel. The blacksmith they chose is one of the top guys working in Sakai currently. These are two sided knives with 50/50 edges and they have a beautiful secondary bevel on each side that really sets the knife apart from others aesthetically. This knife also is offered with a very nice yew octagonal handle. Ginsan steel is excellent quality stainless steel so this knife will look as good as it performs. Konosuke is making some of the best knives we carry and this one is one of our favorites on the site.

    awesome knife, i love this steel as a decent work horse steel, and it has all the advantages of a high carbon steel. ginsan has smaller carbines, it will get razor sharp... this knife is a laser... my only fault is that the handle is light... this is a light knife all together.. also my handle wasn't really crafted well all together either, where the horn and wood meet it is not seamless as i would expect, i own a konosuke fujiyama blue #2 210 petty, a takeda 245 ish gyuto and this here, as well as a shun vg-10 chefs knife... really dislike that steel, seems a bit more fragile than this steel yet this steel is also very delicate... there is a big flat spot, like you will see in the video... you can still rock decently, most product will stick when you cut it, for me thats not a major problem, the good out weights the bad on that , use it every night as my line knife, great size, all purpose knife... i would buy another one if it went out or was lost... i wish they made a 120 petty and the handle was made as nicely as the fujiyama series. service with this company is amazing, fast shipping as always. no hassle ever. hope this helps.
