Hideo Kitaoka crafts these beautiful blades from his small shop in Takefu Village, Echizen, in Fukui Prefecture. This is where he has honed his prodigious skills for over 30 years. The Kitaoka Black Damascus line of knives are completely handmade knives exuding high quality, wonderful looks, and well executed grinds. Kitaoka-san explains his passion: "There have been many times when I've felt frustrated, but it is fun to make 10 or 20 knives with the same shape, by simply pounding a hammer on a red-hot iron lump. I think that's what the mind of a craftsman is."
The VG-10 Black Damascus knives are constructed with an inner core of the ubiquitous stainless steel, VG-10. The cladding is made from a nickel steel forged into a beautiful damascus. This is one of Kitaoka-sanís most revered abilities, and it certainly shows in this stunning blade. Of course it is also a fine performer. At 260mm edge length, the perfect length for most users and spaces, it will dispatch the freshest raw protein with a single light stroke. The octagonal handle is perfectly balanced aesthetically and functionally. It is finely crafted from rosewood and black pakka wood.
