The Kiwami Stainless Steel Cleaver is made by Aichi Hamano, located in Seki City. The company produces a large variety of knives using many different steels and techniques. This cleaver
is constructed from 8A stainless steel. 8A is better known as AUS-8A. It is almost the same thing as AUS-8 except that 8A has been annealed. Both AUS-8 and AUS-8A are very similar to 440C and VG-10. AUS is made by Aichi Seiko and it is capable of taking a screaming sharp edge. The blade is hardened to about 60 Rockwell.
This is a classic Chinese cleaver in terms of dimensions and proportions. It measures 177mm on the edge with a height of 84mm. The grinds are very well executed and are extremely thin, making this model perfectly suited to chop vegetables and other ingredients. There is a very slight belly to the edge profile which reduces the chance of the end sticking into the cutting board.
It is no wonder that in most Eastern kitchens the Chinese cleaver is the sole cutting and slicing tool. With such a range of applications, cleavers are fun, novel, and versatile options to fill pretty much any role there is for kitchen cutlery.
