The Kiyotsuna Josaku nakiri is a well built knife. It is constructed from a core of AUS-8A stainless steel with a softer stainless steel cladding. It comes with a simple D-shaped wood handle with plastic ferrule. This is a single grind blade so it is only suitable for right-handed users.
Nakiri knives are made to slice and chop vegetables. Nakiri bocho means knife for cutting greens. They come in a variety of distinct shapes dependent upon the region of origin. They feature a fairly thin blade grind to allow the cutting of vegetables without cracking them or wedging. The shape of the nakiri bocho differs according to the region of origin, with knives in the Tokyo area being rectangular in shape, whereas the knives in the Osaka area are called kamagata nakiri and have a rounded corner on the far blunt side.
This particular nakiri is a nice example of the Tokyo style with a fairly flat profile and medium blade height. It is reasonably thin behind the edge and overall quite light in weight. If you are looking to try this style of blade for the first time or are dipping your toes into the Japanese kitchen knife waters, then the Kiyotsuna Josaku nakiri would make a great first choice.
