Sakai Takayuki is a name that is well-known and highly regarded by knife users and collectors worldwide. They have been making blades for over 600 years with the famed company starting up in Sakai during the 16th century making knives to trim and cut tobacco.
Sakai Takayuki is now owned by Aoki-Hamano Seisakusho Company. They work with some of Japan’s best blacksmiths to create their many different lines of knives, including this Tokujuo range made by famed blade maker Kenji Togashi. Togashi san is one of the most popular bladesmiths in Japan among knife cognoscenti, for very good reason. His single-bevel creations are beautifully crafted items that are then completed by some of the best sharpeners and finishers in Sakai City. This is a rare left handed Kiritsuke especially because of it's 300mm length.
This Kiritsuke is a knife for serious users. Sushi knives rarely get any longer than this for space and maintenance reasons. But given the space and practical skills, this is a rare and beautiful blade that would be the envy of most sushi chefs and knife lovers. It's rare to find a single bevel knife with natural stone finish that comes in left-handed orientation.
