VG-10 steel is a designation used for a very particular type of stainless steel. The G stands for “gold”, which refers to the “gold standard” that this level of stainless steel is considered to have met. VG-10 steel is produced in Japan, and it is the Japanese cutlery market that has traditionally made the most use of this alloy.
Hiroshi Kato has created his affordable line of kitchen knives out of this well-liked steel which he then wraps in finely decorated outer layers of stainless steel. Unlike the other knives in the Kato Suminagashi line, this Santoku features a traditional oval wa handle.
The Kato santoku's blade and handle are designed to work in harmony by matching the blade's width/weight to the weight of blade tang and handle, The Japanese santoku is regarded as a well-balanced knife. This is certainly true of the Kato VG-10 santoku. While the knife may be used in a rocking motion, very little cutting edge makes contact with the surface due to the extreme radius of the tip. The best action relies more on a single downward cut and even landing from heel to tip, thus using less of a rocking motion than a Western-style knife.
