The deba knife is a traditional Japanese fillet knife, built thick and heavy for cutting through fish bones with ease. Knives from the Tosa region, in particular, are often not single bevel ground as they are further north. Instead, they are given a 50/50 grind suitable for use by lefties and righties, and that is the case here as well. The Kajiwara 165mm deba is constructed of Aogami #2 or blue paper #2 steel, and it is an extremely thick knife. This blade will laugh fish heads in the face, and break through backbones as if they didn’t exist. The kurouchi finish has a lovely handmade rustic look, and it protects the 100% carbon steel blade from corrosion. Like all carbon knives, this deba should be wiped dry before storage. This knife comes in at 11+ ounces at only 165mm in length, which is serious heft—this knife is ready for some serious work.
