The Itto-Ryu White #2 Petty is constructed from the ever-popular Hitachi white paper #2 steel sandwiched between an outer cladding of a semi-stainless iron. The cladding is given an attractive and durable hammered kurouchi finish. This gives the knife a distinctive look while aiding greatly in its excellent food release properties. We really like the matte finish on the lower blade road that transitions to the polished inner core steel at the edge. We also admire the hand-chiseled kanji that further enhances the look of this great looking blade.
This knife has nice balance and very well executed grinds. The spine is fairly thick at the neck but tapers down to a thin point.
This knife falls through food with an assured feel and ease that belies its attractive price. The handle is basic but feels good in use. It has a nice texture that allows for a secure and safe grip even with wet hands. Very highly recommended!
