We cannot get over the quality and value of this line of knives from the Itto-Ryu knife company. In fact we believe they represent one of the best price/performance lines at CKTG.
The santoku knife is a really great all around kitchen blade. It has a deft feel and tall blade which endow the knife with a great deal of versatility in its cutting capabilities. Santoku translates to three virtues and the acts of slicing, chopping, and dicing are tackled with aplomb by this classic design. Many western chefs and home cooks look to the santoku as their go-to blade for most cutting tasks.
Itto-Ryu has crafted a santoku which really does excel at all 3 tasks. It comes out of the box with a first class edge that, with a touch on your favorite stone, becomes a cutting weapon of distinction. The knife is constructed with an inner core of Shirogami 2 steel which is covered in a stainless cladding. A carbon steel outer cladding is given a hammered kurouchi finish which is both smooth and tough. A chiseled Kanji script is applied to the blade giving it an extra touch of class. The handle is a made from maple wood with a buffalo horn ferrule. Perfect for left- and right-handed users.
This is a lot of knife for the money and one that could become your daily go-to blade. We highly recommend this fine piece of kitchen cutlery.

Keep this knife sharp and touched up and it's an absolute pleasure to use. Not the world's thinnest grind, but its blade-forward heft and razor edge make it just melt through product, and it chops particularly well. Draw with the tip, push or rock this very solid Santoku.
