Itto-Ryu is a knife-making company based in Miki, Japan that contracts its knives out to various small blacksmiths in the area. The current line of knives we are carrying are made from the ever popular Hitachi white paper #2 steel. The alloy is heat treated to 61 HRC. They have a really attractive kurouchi finish applied to the carbon cladding which will be slightly reactive. The finish is smooth to the touch and very appealing to the eye.
The fit and finish of the blade is of a really high standard. This is a perfect knife for peeling the skin off of produce and for delicate and fine cutting work on garnishes. It would also be a great choice for fine filleting work and silver skin removal on small cuts of meat.
The rustic look of the blade is complemented by some lovely hand chiseled Kanji characters. A simple burnt chestnut handle with durable black plastic ferrule completes the package. The blade is very sharp right out of the box and it takes and holds a fine edge with ease.
