Michio Ishikawa is a 4th generation blacksmith working for Nakaniida Traditional Blades. Their workshop is located in the Miyagi Prefecture and has been in operation for over 350 years. Ishikawa-san uses Shirogami #2 high carbon steel with a soft iron cladding for the construction of this knife.
This particular knife line is significant in that it is probably the last series of knives being produced using the Nakaniida process. When Ishikawa-san retires, there will be no more Nakaniidas. The Nakaniida process involves 28 steps and is notable in that the blade is hardened three times. This entire process is carried out by Mr. Ishikawa himself. To add to the originality of his knives, they are all single beveled. Gyuto blades are rarely made with just one bevel but he breaks with tradition and we like that!
The white #2 carbon steel receives a soft iron cladding to protect the inner core. The rustic nature of these knives is enhanced by leaving the carbon forging scale in place thus creating the finish known as kurouchi, which adds another layer of protection to the blade. Because it is single beveled the knife is only usable by those of the right-handed persuasion. We have made the blade available with a semi-custom octagonal handle made from walnut and maple.
