Mr. Hinoura is a highly regarded blacksmith in Sanjo City, a historical center of sword and knife making. Mr. Hinouraís Tamashii line of knives features a rustic aesthetic with a high level of fit and finish. This 165mm nakiri is clad construction with a Shirogami #2 carbon steel core hardened to a HRC rating of 62. Shirogami #2 is renowned for its excellent edge taking properties. While Shirogami #2 is reactive and will patina with normal used the knife is clad in stainless steel to minimize upkeep. The black kurouchi finish is durable and attractive. The octagonal handle is made with ebony and is an upgrade over the original one that featured yew wood.

    This knife is an excellent example of a Nakiri. The previous review indicating that this is not a rocker should be disregarded. These knives are not meant to be rockers. Knives are tools and knives such as these are specialty tools. If you do not understand how a tool is used do not fault it. If you dont the the difference between this and a chefs knife stick with a chefs knife.

    This is admittedly my first nakiri, and while I am new to these blacksmithed knives, I am not new to good knives or cooking. This is an excellent knife for someone who wants a nakiri with a forward weight-balance. The one correction I wish to make is mine weighs 7.07oz, not the 6oz the website says nor the 6.1oz the video says. I think this is more than just the variance of being handmade, especially since mine is basically the same dimensions as the one in the video (4.2mm spine before the bladed part, 2.8mm spine where the blade begins, tapers fairly quickly to 2.4mm which it maintains for the rest of the length).The flat blade profile of this is great for working with vegetables and an excellent chopper/push slicer.. It does however make it a bad rocker, to the point that I will reach for a chef's knife for garlic even if I used this for everything else in the dish.
