Hailing from Kashiwa City in the Chiba Prefecture, Goko knives have, in a very short time, become known for high value and fine quality. The line of knives carried by CKTG are made from the very popular white #1 carbon steel. The steel is hardened to 60 Rockwell. They are then clad in stainless steel to aid in rust prevention and maintenance. We love the rustic antique finish of the blade which sets them apart from other knives in this price range, as does the attractive walnut octagonal handle with black pakka wood ferrule, which is pictured, but not featured in the video. But good looks do not make good performance and it is here that the Goko brand excels in its class. Just a few minutes with this santoku will convince you that you have at hand a fine tool and extra fine value.

    This knife is one of the sharpest knives out of the box I've purchased (I own Takeda and Konosuke HD, so I'm not inexperienced at buying sharp knives). Of course, this knife is White #1 and capable a lot more sharpnesslooking forward to that. I've not used it long, so I can't say how it will hold up, but if like me you appreciate the santoku profile, to get this level of quality and functionality for $130 is quite the bargain.

    I understand at the aggressive price range that your getting what you pay for, but I was under welled after seeing the blade in the review video and seeing my own blade.. the grinds of the blade are very choppy and not smooth. I could live with this, cause I can put a few hours on the stones to hopefully smooth it all out but on one side at the chin the person at the grinder slipped and took a very noticeable amount of material off and its the first thing you notice when you look at the blade. Any who it more than makes up for all that with its performance--the thing is a razor after a bit off black and white stropping.

    This is the first knife I've bought as a professional, and I love it (so does everyone else in the kitchen). It sharpens up well and holds its edge. I mainly use it on vegetable prep, but it's extremely versatile, I use it for everything. In a pinch it can even handle cutting through a crusty baguette or carving meat. Unfortunately it got a big nick in the butt of the blade the first day I had it (not while in use, at least to the best of my knowledge - I left it in a fishtub overnight and came back to find a big piece missing), but otherwise it has proved to be durable and the nick does not impact utility.
