We have a very special relationship with the blacksmiths who make Gihei knives for us. The father and son team manufacture several highly regarded knife lines. They are well known for their use of some of the best and most advanced steels. Such is the case with their Zuika ZDP189 knife line.
One of the processes used in the making of steel alloys is Powdered Metallurgy. Although the process of turning powdered metals into a solid form was introduced during the time of the Incas, the process did not gain traction until late in the 19th century. It is commonly used to make unique materials impossible to melt or form in other ways. ZDP189 is one of the most recent developments in PM steels. It is extremely high in Carbon and Chromium making it very expensive to manufacture. It is known for its amazing wear resistance and capability to be hardened up to 67 HRC.
The Gihei Zuika ZDP189 Gyuto is a wonderful example of modern materials and age old techniques and skills coming together to create an item of great form and function. The inner core of ZDP189 is clad with a softer stainless steel in a san-mai construction. Thus the cladding, or jigane, is not wrapped over the spine but just covers the more brittle hagane on both sides. The lower part of the blade face is given a nice matte finish which contrasts with the upper polished face and the exposed cutting edge. It has a 50/50 bevel suitable for left or right handed users. The edge profile features a nicely curved belly with enough of a flat section to please both push and rocking style cutters.
The finely finished blade comes with a Oak wood octagonal handle and buffalo horn ferrule.
