Gihei knives are made by family Hosikawa, a father and son blacksmith team located in Niigata Prefecture. Their claim to fame is their use of top line steels with extraordinary grinds and heat treatments. Their quality control is equally impressive resulting in blades of beauty and superior functionality and durability.

ZDP-189 is a recently introduced alloy made with Powdered Metallurgical processing. It is one of the most expensive knife steels to produce. The alloy is highly regarded for several reasons including its wear resistance, toughness, and ability to be hardened to very high levels. A side issue of this however is the difficulty in sharpening by hand. But once done, you will have an edge of supreme sharpness and ability to last way into your prep sessions.

This gyuto from Gihei is a mid-sized 210mm knife with an average blade height. It is quite stout at the spine and very stiff at the tip. It has a symmetrical 50/50 bevel and a really well formed edge profile suitable for both push and rocking cutters. The lovely finish on the blade face is beautifully realized with a traditional matte lower blade path and finely chiseled kanji script. A simple and well finished oak handle with buffalo horn ferrule completes this picture of subdued elegance.

    I'm giving this knife 4 out of 5 stars, or maybe 4.5 if I could. It's a really solid performer and has great height at the heel. Here's the good: Super strong steel that holds an edge for a very long time! Exaggerated height at the heel. Great balance, very comfortable in your hand. Here's the bad: It's a bit thick - I knew it wasn't a laser but this thing has some extra heft that I don't love. That super strong steel will wear you out putting an edge on it. It is totally worth the effort but be prepared to do some work!

    This knife had just come up under Gihei and was surprised to see a ZDP-189. WOW! That is about all I can say. This is a very well made knife and extremely hard metal. OOTB very sharp but I changed the angle to 12.5 degrees on the Wicked Edge and finished off to 0.6mu. AMAZINGLY sharp and with diamond stones did not take that long. I have read that with whetstones it might be a little more difficult to sharpen due to the hardness of the metal. Octagonal handle is large and feels great and very well balanced. All I can say is if you can afford it buy one while you can. ZDP-189 knives are not cheap and this is a very, very well made knife. Thank Mark for bringing this one in. Almost temped to also get the 240 mm.
