This is a closeout item. We found a few more on the shelf so they're offered at a sale price. Made with SK-4 Japanese high carbon steel, these knives are heat-treated to HRC. 58-59. These knives are mono-steel constructed and will rust if not cared for properly. Use it, wash it by hand and towel dry by hand to avoid rusting. The knife we're offering here is their most popular size and shape gyuto 210mm. The double-bevel knife is asymmetrically ground on the edge with a 70/30 grind.
