Itís always fun to add a new knife or maker to our ever growing roster of kitchen cutlery, whether it is a high art yanagiba or honyaki knife, a blade made by a legendary smith, or an affordable new creation to ease new users into this fascinating world. Then there are those quirky, inexpensive little gems that fall outside of the box in the best ways possible.

Enter the Maruyoshi V1 Stainless Steel Paring Knife, made with a high quality stainless steel called V1 or VG-1. V1 slots in between VG-10 and 440 in terms of grain structure and edge holding characteristics. VG-1 has less molybdenum and is absent vanadium, manganese, and cobalt. It does contain nickel which VG-10 does not. Overall, the steel properties are very similar to VG-10 with maybe slightly less stain resistance, but almost as much durability and ease of sharpening.

The easy maintenance aspect of this knife is essential to the way many people will employ this versatile little tool. You get a really good steel, well-constructed handle and a friction fit saya for a bargain basement price. This little utility knife would find a home in any drawer, tackle box, tool shed, or camping kit. How can you not want one of these fun and functional little blades?

Inexpensive Japanese knife I got to practice freehand sharpening this style of knife. So far Iíve turned the original edge into a butter knife. Iíll get there. Nice paring size knife for little money.

OOTB edge isn't great, saya is loose and isn't secured well onto the knife. The tip of the one I received seems to be over-ground. For the price, it's a nice little knife that is great for simple outdoor food prep during hikes.

the ootb edge is just ok. Not amazing. But passable. Blade profile is good and the handle is rough but comfortable. The saya fits well and you get what you pay for. Donít overlook it just for that. It has a place in my work kit and will surely become a solid every day piece.
