While these great looking blades are named steak knives, we think that they could be employed as small petty or paring knives with equal success. However you use them, they possess a look and feel that spells quality and art. The lovely blade is made from the evergreen stainless steel called VG-10. This is hands down the most popular stainless steel used in the manufacture of kitchen knives. The name stands for V Gold 10, or sometimes V-Kin-10 (kin means "gold" in Japanese).

The smiths at Takayuki know how treat and hardened VG-10 correctly, thus justifying its reputation as one of the most outstanding stainless alloys in terms of edge holding, ease of sharpening, stability, and stainless properties.

The core steel is covered with a multi-layer damascus softer stainless steel to add resilience and allow for a lighter and more ductile blade. This cladding is then given a beautiful tsuchime (hammered) finish before being polished to a high luster.

These stunning steak knives would be the center of attraction on any dinner table. Cutting into your favorite piece of perfectly cooked steak will become a thing of spiritual perfection!

    My first VG-10 knife and I like it a lot! I aggree wigth Brad: very handy around the kitchen. Latest killer app: skinning salmon.
    Edge out of box was good but didn't last. A short time with a high-grit stone brought a lasting edge out. A fine knife.
    Yes; it also cuts a (preferred term of emphasis) steak!

    Gorgeous little utility knife. It was billed as a steak knife and it excels at that task, but it may end up being an all around utility knife at my house. Beautiful finish on the blade and excellent fit and finish that one would expect from a Takayuki knife. Sharpness out of the box was very good and the sweeping blade profile works well for a variety of tasks. It's a substantial feeling and looking knife for only coming in at an advertised 125mm at the edge. Very happy with the purchase.
