Mr. Ebuchi is a 2nd generation blacksmith born in 1965. He works with his younger brother in their shop in Sakai City. We are just getting started with this new line of knives and our initial impressions are that they represent great value for a real workhorse kitchen knife. The fit and finish is of high quality and the grinds are very well executed. These are thick knives, in the true workhorse vernacular, but despite this heft the grinds and edge geometry result in a blade that is a great cutter.
The inner core is fashioned from Shirogami #2 high carbon steel. A softer iron cladding is hammer forged to the inner core using the san-mai method. This softer cladding is further protected by retaining the forgerís carbon or kurouchi finish. The secondary blade road is given a hairline finish.
There is something quite intriguing about the shape of a bunka. The combination of the reverse tanto-style tip and short, tall blade lend the knife a very purposeful look. These knives are gaining in popularity recently due to their do-it-all abilities. They are adept at cutting, slicing, and chopping, while the tip affords them the ability to take on smaller ingredients and get into tight spaces. They are a good choice for making garnishes and undertaking detail work of all kinds.
