This Dojo Hayashi 135mm petty features an Aogami Super steel core, a premier cutlery steel capable of taking high performing edges and holding them through intense kitchen prep sessions. The reactive carbon steel core is protected by a low maintenance stainless steel cladding with an attractive finish. Few knives deliver the performance of the Dojo in this price range making the Dojo an outstanding choice for anyone who wants to try their hand with Aogami Super or carbon steels more generally and a perfect choice for anyone who simply demands high quality on a budget.

    4  Dojo AS 135mm Petty, December 5, 2018

I like the blade thinness, how it is perfectly straight, and the decorative pattern, but do see a few issues. The belly on mine is a bit overground so I will have to hope the rest of the blade catches up during later sharpenings. It looks odd and will likely affect the complete separation of things like green onions if I cut them with the heel.

There is also a noticeable gap between the tang and the handle even though the riveting seems decent. I can hold the handle-to-blade junction up to the light and there's at least a centimeter of space where light peeks out. Water is definitely going to get in there and possibly cause rust if I don't watch it

Overall, not a bad buy, but these couple of defects are somewhat significant to me.

I am a frugal man, but I can't help but part with my hard earned dollars in order to acquire the knives featured on this site. I've heeded the recom- mendations of Mr Richmond and haven't been disappointed yet. These blades represent great value, IMHO.

Sharpens easily, holds edge well, great carbon steel core, laminated with stainless to minimize susceptibility to corrosion but still require extra care. Size works well for most things. Probably the best value in a super blue steel kitchen knife.
