Here is an excellent take on the small slicer using good quality carbon steel from Takefu Steel Mill called Blue #1.

    The qualities of the steel are:

  • 1. low impurity
  • 2. easy heat treatment
  • 3. strong temper

    The elements Cr (Chromium), W (Tungsten), and V (Vanadium) form hard and compact carbide in the steel which improves durability. High hardness and high strength are achieved by the addition of W (Tungsten) and Cr (Chromium) to enhance the steel properties, which produces a well-balanced steel to make annealing easier and improved hardenability.

    This was almost everything I want in a slicer, high quality steel, comfortable handle, easy to sharpen, and perfect balance with a slight forward weight. However it wasn't very sharp when I received it. It could only push cut paper irregularly, in a few spots. It could not shave carrots paper thin and wedged a little in onions instead of just falling through like I expected. Fifteen minutes on a stone has made it absolutely razor sharp, but I might need to thin it a tiny bit until it's absolutely effortless to use. The light weight and the high quality steel makes it one of the best slicers I have ever purchased.

    This is my third Chopper King and my second small slicer. They all cut very well. I gave away the vg10; I loved it, and kept the shirogami white and this one. I thought the shirogami got sharper initially. But I let one of my students use it and she beat it up, so I had to sharpen it.
    The 1000-6000 progression got the blue steel incredibly sharp with little effort (Arashiyama). I stropped it on denim loaded with 3 micron paste (my new secret sauce). Gorgeous polish on a very, very, sharp blade.

    Since I’ve given my brigade most of my blades I don’t get to cut very much since they do all the prep. So I stay busy keeping their blades sharp. That’s okay; this extremely affordable beast can stay perched in its stand.
