VG-10 is also known as V Gold 10, and it is one of the most popular stainless steels in the kitchen knife world. VG-10 was originally designed by Takefu Special Steel Co. and is now so sought after that the manufacturer has been asked to curtail supplies to blade makers outside of Japan to prevent creating shortages at home.

The Mcusta Zanmai VG-10 Hybrid Series is forged from high carbon VG-10 stainless steel and is designed and engineered for ease of maintenance while boasting a long-lasting and easy to sharpen edge. The core steel is hardened to about 60 HRC, which provides strength and a bit of flexibility, thus reducing chipping and edge deformation. These are not stamped knives. Rather, they are laser cut from a pre-made steel sandwich and then sharpened using Zanmai's Hamaguri V-Cut form. This results in a very uniform edge and a blade that excels in food release.

One noteworthy aspect of this knife is the unusual handle and bolster setup. The beautiful octagonal shape handle is made of black pakka wood and features a nickel silver bolster and inlaid mother of pearl pin. The fit and finish of these knives is quite outstanding and, coupled with their easy to use attributes, represents a perfect entry point in to the world of high quality Japanese kitchen knives.
